I sure do love a crispy meringue texture blast on a cake. I also love a tangy sweet jam, a buttery homemade toffee-bits crunch, a sprinkle of freeze dried berries for maximal flavour blaster and even more tang. I love a tang. (Should I change my name to Lyndsay Tang??) My secret trick for power-making meringues : when I’m making SMBC for a cake, I just steal a gentle tiny cloud of meringue from my mixing bowl before I add the butter and flavouring. I dollop it into a piping bag fitted with a very cute star tip, pipe a few rows onto a parchment paper covered baking sheet, then into the oven it goes for a peaceful 200 degree power-hour or two, til crisp and dry (but not browned.)
